busted sender or trapped sender wire (i.e earthing out).

Either that or your engine is about to expire.

the light isn't an oil level light, it's an oil pressure light, no amount of topping up will fix the light if it is about to expire.
Probably the lead just fell off.
Do you know what to look for ?

temp sensor is the one behind the oil pressure (slightly to the right and screwed in horizontally) that is on a 2000 car

If yours is an early car it is screwed into the same cross pipe but on the back of it behind the manifold.

Put down the spanner and step away from the vehicle.

try looking under here.

bitch to get at the early ones, you'll need to pull off the breather pipes to get at it.
