MAF and erratic idle etc?

MAF and erratic idle etc?
A question for the informed.
Having a modern car (Impreza) and an older car (erm... Citroen AX GT). Can someone explain what they regard as an erratic idle in Impreza terms?
How do you detect it? Is it all about reactiveness? i.e. Should the car idle at 800rpm consistently regardless of conditions. e.g. cold start, hot start, hot summers day or ffffreezing?
I run a P1 registered in Dec. 2000 which has done 28K miles. Should I be worrying?
