ET45 you should be alright with.
Maxxis are probably ok tyres. The Forester doesn't need the last word in technical tyres, which is why Prodrive are recommending Pirelli P6000 in 17".
Just check the Maxxis load rating is 94V or higher

91W is 615kg load rated/168mph speed rated.
94V is 670kg load rated/149mph speed rated.
JDM STi Forester has a higher top speed than 149mph which is why it has to have a W rated tyre. UK 2.5 has a Vmax of 140mph so is ok on a V rated tyre.
Although the 91W is lower load rated than the 94V, because of it's higher speed capability it will have a stronger carcass construction, which is probably why it can have a lower load rating - if you understand me
