Either will do. They are compatible so you can mix them.
Generally dot 5.1 is fit and forget, it will last ages and perform fairly well.
Some dot 4 is lower quality than dot 5.1 but still OK.
Some race fluid performs excellently but is theoretically dot 4 because it has a low life between changing. Not because it is cheap but because it is specialist stuff and absorbs a lot of water from the atmosphere.
So the conclusion is that the categories that define brake fluid for the general public break down when you get too specialist and should be ignored. If you want to fit a race fluid it's likely to be dot 4. Don't knock it because of this but be aware you may need to change it regularlay, like every 12 months.
