Default bleeding brakes question

just done me discs and pads all round
got me self some 5.1 dot fluid and goodridge hoses
BUT
how do you bleed the system ?
me dad has got bleed system thingy that has got a couple of
lines coming out of a bottle,1 goes to a tyre for pressure the other goes on the brake
fluid bottle with a special cap to fit BUT in the kit there wasn't a
cap to fit my impreza , therefore i got hold of a cap of similar size
from a scrappy and we put loads of cling film and tape around it but
it still didn't seal 100% and leaked . . so we gave up . . went to garage
and they said 2 hour job,80 quid + vat ??????????????

any ideas or help would be appreciated,,,,,,,,,,,,,,,
cheers,,,,,,,,,,,,,
