I've pm'd you as interested...I take it one calliper is the 3s0 and the other 2so (left and right hand bleed). I can only see the 3s0 in the pictures so thought I'd check first!
Someone feel free to correct me if I'm being stupid and misunderstood the way AP name their callipers.
What size disc and pads will this take which would people recommend?

You are correct
,the 2S0 i think are a right caliper and the 3S0 is the left,Pad wise they come with Ferodo DS2500 which are not to bad for street use but they do throw up alot of dust i would go with a Performance Friction pad 08 compound, that i purchased from Alyn of ASPerformance, but really pad choice is dependent on how you drive and how you use your car i.e...fast road or track or a bit of both,Alyn is the man really that you need to talk to,for advise about pads as he advised me for my AP set up.SJ.

More pictures attached for left and right calipers.
They are without brackets. Brackets size depend of disc size.
I use same calipers with 330 discs. Some 17" wheels can clear them with 330mm discs.
You can yse them with 330/355/362mm discs as you said before.

Where can you get adaptors to suit a later 5x114.3 hub and associated rotors?

Great found bells and rotors but could not find any listing for the adaptors to hubs? Do you have a link?

You're best buying the 2 piece discs and brackets together to ensure they are compatible.
Both as performance or Godspeed can do both. Get in contact with them.

Thanks, are you sure these will work with 330mm discs as ap racing themselves quote these cp7040 calipers are suited to 362mm x32mm discs?
