I've got an oil temp DEFi on the way, I'm planning to use the hole above cylinder 3, which I assume you are referring to. I personally think that would be better than a sandwich plate, especially as the oil filter can have a fair amount of air flow to it, it wouldn't be an accurate reading I feel. At the same time, I recently read a post about these types of senders crating their own air pocket, again causing a false reading. So hopefully someone with more experience than me will be a long to give a DEFInate answer (sorry about that)

For best/most accurate readings use the senders on the block not sandwich late.Oil temp sender replaces the blanking plug under the intercooler (you will need an adaptor to fit the sender into prior to fitting to the block) and the Oil Pressure sender replaces the OE one under the alternator

This is a funny one, the defi booklet shows the oil pressure being used in the normal position but the oil temp using a sandwich plate.

I have both of mine installed in a sandwich and have had no problems.

I'm sure either way won't give you any problems, just different readings.
So what made you go for the sandwich plate?
