Exhaust note sounds flat

Can anyone help?, bought a new sti8 in May this year drove it for a while but felt something was not quite right with it sometimes it would just sound a bit flat in the exhaust tone and other times it seemed to sound just right. I decided to get it PPP'd but even though it improved the performance the exhaust still seemed to sound flat from time to time.
I then got the car decatted, changed the panel filter to a K& N and got a Tek3 from BR developments, again performance improved but I still have the same problem with the exhaust note sounding flat from time to time.
My subaru garage have investigated the problem, changed a large number of parts but still the same problem. The weather does not seem to make any difference hot, cold, rain the problem is still there. Checked it with Delta Dash software but no faults, seems each time I take it in to have it looked at the car runs perfectly.
The only time I know the car will run well is first thing in the morning, just let it warm up, then boot it and it fly’s and sounds amazing

Does it run OK when it sounds "flat", or is it missing / juddering / not producing much power at the time?
Not that I know what it is necessarily, but more facts might help diagnostics.
