My work colleague said his dad has a 5 speed sti classic. I never new they did one I thought they was all 6 speeds? Any how if this is the case would the 5 speed sti clutch fit my 5 speed 97 uk2000 with the stock flywheel?

As eluded to, the six speed was introduced with the New Age Bugeye STi, onwards.
I believe the 5sp clutch disc dia. is 225mm and the 6sp's @ 230. Not sure whether they're interchangeable, though... |
Get a 225mm Competition Clutch - Stage 2.
I have one in my 384/349 STi 5 since around 2013...and it hasn't missed a beat. |

The company's name is Competiton Clutch.
As regards the disc's compound...not sure who makes it, etc. |

Early classics 225mm later classics think v5/6 230mm the later 230mm fits all but check the flywheel it might need skimmed if upgrading. The newage 240mm I think.
