Thanks for the input folks but we had a late contender come steaming up on the rails and has taken the prize:

A whole duck is completely boned, then filled with pork, breadcrumbs, apricots, apples and raisins, interwoven with pieces of juicy ham. It is then barded with streaky bacon and decorated with apricots.
