Why have plates fallen out of favour as the item of choice for serving food on?
Perhaps I'm a traditionalist, but I don't like having food brought to me on a shovel or a chopping board, nor do I like my chips in a little galvanised bucket.
A rare steak served on a flat piece of wood is only ever going to end with run-off

Roofing slates being used as plates is in no way an idea that has come from a balanced mind. Far too flat. The only upside is a little bit of amusement when the waiter/waitress tries to get their fingers underneath it to take it away - especially if they bite their nails.
I remember when a "cup-a-soup" was a novelty serving suggestion.

Because every chef in the UK thinks he's Michel Roux. Then again, I just find the whole eating out scene in the UK pretty dire in general when compared to other places around the globe.

Oh don't get me started, what happens when you want gravy on chips that are served on an old floor board. If i wanted my food on a slate tile, I would have thrown it on the roof, my peas would roll off onto the floor just as easy.
And steaks on sizzling hot plates, If I as for it rare why the fug would i want it left cooking until it's welldone. What about tea cups with handles so small my 5 week old daughter would have to hold it for me.

I was once served a meal on a flat slate..In my annoyance, I deliberately smothered the steak in peppercorn sauce, allowing it run from the slate and over the table.
When the waiter returned a few minutes later with the disinterested and insincere, "are you enjoying your meals?" I politely requested that a fresh meal be served in an appropriate piece of apparatus in which to contain the meal and any liquid condiments.
