Steering wheel is quite easy, just don't remove the nut fully before you try and yank the wheel off unless you want £250 from 'You've been framed'. If you're nervous you can remove the battery before disconnecting the airbag, but I don't bother. You need torx bits for the airbag screws although I can't remember the size.

As for the seats, you'll need some side mounts and a subframe. You'll only need the rails if you want to adjust the distance from the wheel. Not being able to do this has its advantages as my misses can't reach the pedals anymore

And if you do remove the battery, remember to give it 15mins or so to discharge from the system before doing anything!
