Start at the back, under the armrest lid. Work your way forwards. There are only a few screws but lots of clips.
There are/were plenty of guides/links to this sort of stuff. Sadly, I can't find them.

Centre dash... I've never stripped mine out.
Nicked from P1WOC...
"The heater vents are part of the top cubbyhole bit and they have two screws in the cubby hole under two covers. The centre console surround just clips out, I realised this when I pulled on my stereo and the whole thing came off!!"

just taken mine off and its a real pain, simply pull towards you HARD,the problem is the console in fitted to the dash with one way lugs,so you need lots off grunt to pull it out,it feels like you are going to break it,but thats how it is(remember to remove the screws first)PULLLLL

Open the top cubby hole, on either side there is a rectangular piece of plastic, prise it our to reveal two phillips screws. Take them out, wedge out the heated rear screen and hazard butttons to help you pull it out.
