You won't go far wrong with Alan. Might be worth ringing him and discussing options.
You need to tell us what you'll be using the engine for i.e fast road, tract, drag etc.
As Alyn says, if you're starting from scratch most would be looking for a CDB. But, it does sound like you're talking about two that are for sell on here.
I was always against the 2.5 until my dad had his fitted in his classic supplied by RCM. It's an awesome set up with a massive amount of low down torque.
In saying that, i've chose to go down the 2.1 stroker lump myself. It is up to you but i'd be swaying towards the 2.1 mainly because Alan (Enginetuner) built it. He will offer a complete inspection and fitting service.

The clinic rave about their classic type r with a 2.5 and I thinks it's got a sc36 with it. They love it for road and state that even the monster builds struggle to keep up with it on the road. The track is a totally different kettle of fish mind.
IMO. I'd be calling the clinic and enginetuner. Explain your situation and get both their professional opinions. Then I'd visit both in person and make a decision from there.
Don't get caught up in the pissing contest which is chasing bhp.
