Question What thickness head gasket?

My engine rebuild continues slowly! Have SORNed the 2003 EJ205 WRX PPP for the winter while I sort various bits. The blocks have been bored and decked 3-4 thou. The heads have been skimmed 6 thou to remove traces of a previous small gremlin leaving little footprints on head and old piston 3.
New pistons (cast, not forged thanks to she who must be obeyed) are marked as 0.3 decked, so in theory should be OK with standard (1 mm, is that right?) gasket. However, having had piston and valve contact issues with my tuned '67 Alfa 105 engine after head skimming, I am concerned about depth the valves will descend into the cylinders. If you take meat off the block, worry about piston/head contact (dependent on combustion chamber shape). If you take meat off the head, worry about piston/valve contact.
New to Scooby engines and loving it! Please help

Genuine subaru 0.6mm head gaskets or the cosworth equivalent 0.7mm i think, you could go thicker to play it safe but your engine would loose responsiveness, get in touch with someone like api or advanced automotives and they will tell you exactly what you need and will sort your gaskets for a good price.
