Does anyone know where I can get hold of a table of sensor voltages ?

From: 32 cylinders and many cats

Ravensblade impreza site but note the US models are different for some sensors.

Better still the Link manual from the MRT rally site.

Yep - as John says WRX 5 manual available here http://www.mrtrally.com.au/performance/docs/WRX-V5.pdf for My97 & later.
