Default Head gasket

I think my head gasket might be gone. I keep suffering a loss of coolant but there is no evidence of a leak from the radiator or hoses etc. The coolant system pressurises very quickly and there is a constant stream of bubbles coming up through through the header tank or the expansion bottle, as the revs increase so does the steam of bubbles. I think when out on the road the pressure is forcing the coolant out through the expansion bottle.

Am I on the right track?

I'm thinking of taking the engine out and replacing the head gaskets but there seems to be a choice of thicknesses, 0.7mm, 1.0mm, 1.5mm. Which should I be looking at fitting?

The bubbles smell like exhaust and petrol smell. Usually runs at 1.3bar most of the time on low boost and 1.65bar on high boost, I know thats probably the reason the head gasket has gone.
