Look for a specific Subaru designed wheel these usually are 7x17 or 7x18 for classics.
Normally come in an offset of between 45~50ish and will have a PCD of 5x100.

Tyre wise look at the more common 215/40/17, if going for 18's then 215/35/18.
Easist thing to do is to buy from a wheel specialist or from one of the recommended subaru traders/specialists that people recommend.

Personally I've had loads of wheels and tyre combinations from:

Offset is the relation to the wheel to disk line, i.e. a how much the wheels centre line is offset from the disk line. For example a 35 Offset will sit further towards the wheel arch giving you more clearance for bigger brakes and a wider track. The problem with a 35 offset is that if your running standard top mounts it will cause rubbing on the arches so this is to far for most classic imprezas. A 45 offset will have the wheel sitting closer to the inner arch which will be near what you have now. Classics run a safe 40 -48 offset anything within this will be a perfect fit.

Wheel size 17-18
Offset 40-50
PCD 5x100 Stud pattern
