Studs? Or OE bolts? If they're the standard bolts it's not so much a set torque, it's a particular angle tightening/torqueing sequence. If it's studs, ARP ones are 85lb/ft IIRC but I could be wrong on that, anyway the settings are in the box with them.
If you're using a v5 bottom end your pistons will come up just underdeck whereas the v4 heads were designed for overdeck pistons. End result low compression so you'll need the thinnest gaskets you can find, I think they're 0.3 or 0.6mm. You'll need to throw some numbers in a CR calculator to be sure of what CR you'll end up with using your combo.
Sure a proper engine builder can come on and set me straight if I've got anything wrong there.
