Does anyone know what the standard boost pressure should be peaking at on an 02 STI?

It's peaking around 1.3bar, and I'm not entirely sure if the car has been modified at all before it was purchased..?

don't remember what my sti was before mapping but after it was 1.25 bar.your car may have been mapped?

 

Sounds about right. Theoretical max boost is momentary 1.1 bar, followed by steady 1.0 bar. But I found that max boost would briefly hit 1.3 bar on my Defis if I really wellied it. And be aware that Defis tend to over-read by about 0.1 bar if that's what you are using.
