Fitting Gruppe-S Headers Problem
About to fit a set of Gruppe-S V2 Headers to my MY07 STi, problem is that I remember when I had these fitted to my MY03 STi we had to knock **** out of the beam to get them in place.
I don't really want to do this to my new car so is there a way around this.

Are you talking about the front cross beam?
If so, i just chop a little out as per the pic below. These are GT spec though. The Gruppe S ones (2 bolt) i fitted to my own car did not require this. This is a pic of a WR1 i was working on so i think it will be the same as yours.
If you are talking about a 3 bolt design and you are strugling for access to the 3rd bolt (the one you get throuh the wheel arc) i just lightly tease the lip over with a ball pein hammer to give access. Neither of the above will affect it structually.

You can gain a little bit by pushing the engine back on it's mounts but IMHO it's not enough to stop it fouling. If you cut it out nice and neatly like i have done and paint it it will look as though it's meant to be there.
If you want to **** it with a hammer then you are right - it's a bit of a bodge.
Neither of the above will affect the car in any way, you are only removing the outer extremities of the beam cross section, it will not affect the rigidity.
