Default Is 5w40 to thin for a classic?

I have a MY99 UK turbo with 56,000miles. Its running full decat, apexi filter and tek 2, pushing out 280bhp and 270lb/ft torque.
Going to be servicing it myself from now on.
I will be using either motul or silkolene engine oil, but I'm not sure which grade to go for.

I have always used mobil 15w50 in my old sti and the last oil change in my UK turbo (well, I gave some for the dealer to use, not sure if they actually did!), and have never had an issue.

But at the moment, with the cold weather, the engine is taking a while to warm up. Basically it is quite 'slappy happy' for the first 5-10 mins.

It won't be doing track days (well unless I get an itch I have to scratch! ), and I don't cane it everywhere on the roads.

Which grade would you use and why?

for cold weather i'd say 5w-40 is fine, it will warm up faster that the 15w and the 40 imo has a spot on working temp for the road, track may be not
