would you be able to explain why someone would do this anyway Paul? as in what sort of level does it become the preference?

Perhaps the person offering to sell you this service would be able to comment!

nobody has offered it....someone merely mentionned that it may be possible so was looking for the benefits of doing such a thing.

I know that higher power builds seem to use it as the MAF is not scalable enough....so all i can assume from this is that if the car goes over x bhp then change to MAP, it doesnt really tell me fully why it needs to, or what it means to be "MAP".

Originally the bigger bhp goal was the reason people changed their MAF sensors for nissan ones etc in order to make it read a little more and enable its use for higher bhp...

would seem to be a good idea on the 99/00 cars maybe? with the chocolate maf.
runninng MAP based means that the ecu takes the readings for fuel adjustment from the Manifold pressure (+TPS iirc) and then "simulates" the correct MAF voltage for that zone, developed by three I believe the service is offered only by one person, so a call to AFP might throw more light on it for you.

I can see three reason for choosing a MAP based tuning rather than a MAF based :
1) MAF sensor is a sensible device, prone to failure. When you know how important the air-flow is for the engine's life, that's a very good reason.
2) with big hp cars, MAF will saturate. A big MAF can be used instead.
3) MAF accurate bandwidth is limited : It has to be accurate at measuring very low air-flow (2 to 5 gr/s at iddle), but still capable of measuring slight air-flow differences at high air-flow levels (more than 300gr/s for more than 400hp). The MAF is a non-linear device then it's a question of compromise.

On the opposite side, the MAP is reliable, linear and cheaper...

The MY99-00 rom code has a VE based fuel map designed to run the car off the map sensor when the maf fails, its mappable but in a course fashion and would take some working with to get a car really good, possible though given the time and determination. Had a bit of a play with it when I was using the jecs. Limited throttle and rpm scales unfortunately. I found the maf ok in the oem barrell up to about 460 bhp but its off the scale after that and just goes pop. So no need for external devices as such.
