With the Subaru instructions and a reasonable level of car DIY competence you should not have a problem. Dealers take 3-4 hours to fit it, a competent DIYer should be able to do it in a day or thereabouts, plus a visit to get the system charged with gas and oil (about £80)...
I fitted a kit to my MY98 and it took a bit over a day, but I was not rushing and I had a few siezed radiator /fan bolts that needed drilling out and sorting, hence the extra time.

I paid £250 for a complete kit last summer & fitted it to my MY94 Impreza, it really is very straight forward as all the loom is in place. It's not far off plug & play & gas.
From memory you need:
Compressor (+ mounting bracket & bolts)
Front Matrix (in front of rad)
Receiver/Dryer
Pipework
3 (or 4 ?) Relays from the fusebox
1 relay from the OSF bulkhead (looks like a 35mm film cannister)
Dashboard switch (must from a UK car even if fitting a JDM sourced kit)
Aircon matrix for under the dash (ideally will come with box)
2nd rad fan
A good morning is enough to install it.
I've got some instructions on my work PC, I could mail them on Mon if you want them.

Depends on what year you have,to how different it is to fit as they slightly changed the lay out in the car.
I have the details on my PC ? but i'll have to find them then mail them to you if you need them IIRC it's a big file of scanned pages
I fitted air con to our car and it was a pice of pish to fit the only problem we had as it was the older system is that it used the R12 gas but your no supposed to be able to get it now if you knbow what i'm on about !!

1) Did you just add extra fan and use your own rad - Yep
2) What is aircon matrix - My terms may not be official - but one is the rad sized & fits in front of the rad, the other is A4 sized & is located under the dash.
3) What and where is receiver/dryer? - N/S against the inner wing, looks like an alloy 1.5litre bottle
