Unhappy Fuel-cut in 5th during hard accelaration

occasionally my car cuts fuel during hard accelaration in 5th gear. Is this due to overboost safety cut-out?
Its not very often it happends but when it does it don't half make the misses jump!

It looks like you're hitting the 1.2b fuel cut in 5th...

This is usually caused by a dirty MAP sensor, or a sticky solenoid... clean them using brake cleanning spray, procedure and details are available on the web (go for a search )

...or too much boost due to damp / cold conditions

Depends if car is standard or not. If there's a manual boost controller, and it's set too close to the fuel-cut limit, then yes, damp/cold conditions may have a part to play...

even without a manual boost controller, and unmodified, fuel cut can happen under certain circumstances

True, but very unlikely just because of damp/cold conditions. That wouldn't cause the boost to rise from 11psi to 17psi. However, if the boost was already higher than expected due to a clogged restrictor/sticking wastegate solenoid/split pipe/etc, then the weather could be the difference between just under/just over fuel cut...
