Default Clutch seizing up

This has been reported before, with a solution, but I would like to know what causes it;
my car had not been used for a couple of weeks, outside, got in, depressed clutch, wouldn't engage gear. Then tried to start it, with clutch depressed, and it jumped forward whilst not in gear. Googled it, allowed it to jump again, and then it engaged, all good.
Is this the release bearing failing, or fork sticking? Car is at 27000 miles, but 7 years old

Its the clutchplate sticking to the flywheel, it usually happens when the car hasn't been used for a while.

Similar problem with my hawk 28k but my clutch sounds like a bird chirping think release bearing is hitting of flywheel
