First time it's even been as bad, as per the title. Had to wipe the window with some tissues I had lying around, even then it was dripping off of the inside of the windscreen onto the dashboard! No leaks that I have observed, so now I'm worried

Coolant is fine. Doesn't smell either. Carpets etc are not ever damp/wet. Wondering if a window seal is on its way out.

Probably down to the cold weather, my old celica was the same and it was just major condensation.
I use to put a bag of rice on the dash whilst it was parked up and that really made a difference!

First check is the heater controls: have you set them to recirculate the air, or is it set to fresh air intake? The latter reduces condensation.
If it's not that, check carpets for damp under the dash, check the boot for damp, esp in the spare wheel well and the two sides under the trim, check the rear seat and rear ledge for damp from a leaking rear screen, and finally, get it dried out with any proprietary product of a dehumidifier.
