So my bugeye is nearly completely stripped, and the shell is left but the engine has gone but still not been paid , who gets the log book when the bloke with the engine? or the bloke that buys the shell?

shell, engine is irrelevant. the engine code on the logbook will need changing when the new one goes in. (assuming its rebuilt up as a car, if not get recorded as scrapped and right part of the v5 goes back to DVLA)
