I have my DEFI set with the following Warning values:

OIL PRESS: 30
OIL TEMP: 120c
BOOST: 1.2 bar

All of the above is for a MY99 PPP Scooby.

What should the Oil Pressure should be when switched on from cold and when it is nice and warm.

What values should I wait to achieve before I can give the car some stick?

I let mine get to at least 80 degrees c before using a lot of boost and revs.

The values seem okay, I'd set oil preassure a tad lower...what do you see on idle when fully warmed up?

About 35-40 will make sure tomorrow.

 

Pressure & temperature do depend a bit on what oil you're running.
Temperature shouldn't really go over around 105C with normal (well, thrashy type) running.
You didn't point out the units with the oil pressure? It shouldn't drop below around 2bar nor go above around 7. Although someone might want to be a bit more accurate with those, I think they are ball-park!
Can't help with boost - I have no idea what the PPP is meant to hit
