Does anyone know how to change the Excel Sales Invoice Template so it reads £ instead of $?

My regional settings are set to UK.

Highlight the cells
Select 'Format Cells'
Click the 'number' tab
Highlight 'Currency'
Then in the symbol select £ instead of $
