0.6mm OEM subaru or 0.78mm Cosworth??

Who's doing it? They should work out the squish and let you know what thickness of gasket is required.

I'm just buying parts in advance of the build and working out prices, parts and availability.

I would suggest doing a dry build to measure everything correctly and then work out your final gasket thickness from there.
