Default 225mm or 230mm

I have a 95 uk turbo, the clutch is 225mm. Will the 230mm clutch fit my flywheel? How much more torque will the 230 take over the 225?

Yes it will fit. Probably not much more, but there's no point fitting the smaller one. If you want it to take a load of grunt, you need to look into an aftermarket clutch

I dont plan to mod the car to much, It has a stainless and a filter at the moment and thats all I think. I wont be going over 280 with it.
