Lost Water - 2.5 Legacy
I believe there is an inherent fault with overheating/coolant loss on the
2.5, i was talking to David at API about it last month.

Yes, he's right I am afraid, once a 2.5 starts overheating it becomes ' uncurable ' As many a Subaru dealer will tell you.
The problem is usually coincidental with a gurgling noise from the heater area. Replacing the heads in case they are cracked usually cures it for about 2000 miles then it returns. Changing the block has a similar effect. Most likely you will not see anything wrong with any part of the stripped engine which is why it is such a dilemma.
In the past we have pressure tested heads and blocks found nothing wrong, rebuilt the engine only for it to fail. Now we are wiser and replace first time.
In our experience the engine at the point you are at is a throwaway. I can confirm that if you try to repair just in case you are lucky, my opinion is that you are wasting money.
We can supply you with an engine with a warranty if you wish to call us.
