Track Day Wear and Tear

I've done a few trackdays and airfield days in my classic now and have just booked up for Bedford, was wondering about a couple things.
I have a MY98 PPP Classic with EBC turbogrooves and red stuff discs. I am also running on Kumho Ecsta tyres at the moment.
It seems i can't do more than 10 laps or so without smoking brake discs and tyre walls beginning to melt, also i know you shouldn't really brake sharply from 100mph plus due to risk of fuel starvation to the engine, but on the track i often brake hard from 120mph or so to get round corners at end of straights.
Will definately be changing back to Toyos when these wear out, but any thoughts on which brakes or any measures to guard against fuel starvation

keep the tank over half full, although personally have never had any starvation probs, brakes - make sure youve changed the fluid recently to a 5.1 equivalent and are those reds the new ceramics cos otherwise the old ones are crap pads apparently.... also those 2 pots are crap anyway so they'll never be good no matter what else you do with them, almost crashed at the end of the straight at coombe because of those damn things....
Are those Kumhos Ecsta MX. Those are the ones I use on my Bugeye for trackrace and they work great, but obviously not as great as real R tires like Yokohama R048 and Bridgestone 540. And I drive hard, cracking my brakediscs (not drilled but grooved 335mm trackdiscs).
