it's not over heating but after a run for some reason the water tends to come out of the header tank not much but after a time the level does drop quiet a bit, you rekon this would be a good place to start.

to be honest it sounds more like a head gasket problem. scoobys dont seem to suffer from any other coolant related problems. trouble is it's hard to spot coz they dont steam out the exhaust either. some times if you stop and let it idle after a run the temp gauge goes up to hot. the n/s of the rad could be warm not hot to touch. and the bottom hose could be cold. these semm to be the most common symptoms when they do have a head problem. i hope im wrong but it's not usually any other problem.

Engine temp always stays normal, rad is hot all over inc bottom hose, only has the prob of the water coming out of the tank when the engine has been turned off, also it seems to reach it's temp very quick as if the water's not circulating properly.

Forgot to mention the engine has been out of the car for a year untill recently.

Try a new tank cap first. It could just be the seal has perished.
It fixed mine. Coolant was coming out every time I stopped, at idle.

could be i vaguely remember doing 1 ages ago also we had to change the header tank as the lip that the seal sits on was slightly dented so it could not seal properly

Actuall that was my next on my list to change as if the seal was ok in the cap in threoy it should push any excess pressure / water out of the overflow pipe on the expansion tank.
