The XP2700 runs at 2.17ghz, whilst the XP2500 runs at 1.83ghz. Both have a 333mhz bus speed. The advantage that the XP2500 has is a larger cache(512k).
Some games & programs will run faster on the XP2500+ because they take advantage of the larger cache, whilst others will be faster on the XP2700. Not much in it to be honest. If you are gonna overclock, then I would get the XP2500+ as they are supposed to be pretty good for that.
