Which size do you think would be best suited for an 8.5" rim?

Going on our technical books they both have 8.5" as the perfect rim width buddy, with a minimum of 8" and a max of 9.5"

Suggested 255/30/19 is 9" rim with a minimum of 8.5" and max 9.5"

FT, out of interest, according to your spec sheet, or indeed experience, do you know what would be the widest width tyre (and suitable profile) to fit to a 7J x 17" alloy -- so that any 'bulging' of the sidewalls wouldn't cause an issue, when the car's being driven.

[I'm currently running the ubiquitous "+1.5" size of 215/40/17 (OEM fitment being 205/50/16)].
