I was in a similar situation a few years ago. I knew about the impending redundancies and contacted the HR department to volunteer myself for redundancy, which was accepted. The benefit to this was; I walked away with a nice healthy bank balance, and someone else who needs his job got to stay.

The OP has stated several times that she isn't eligible for redundancy

She has stated that she is eligible for being taken for a ride in terms of workload by what's left of the company though.

Can't see the problem, you have given a weeks notice so when that's up your done simples. It has nothing to do with someone saying they won't ley you go as its your choice if you stay.
