I would have headed somewhere like Latvia/Lithuania/Ukraine
Depends what you want I suppose, I do take advantage of the legality of certain substances (very lightly ) my wife does not but we have been 4 times in the last 18 months and will be again soon. There's all kinds of things to do like Museums (not really my scene but I did enjoy the Van Gogh museum) and all sorts of live music to enjoy but most of all it's the general laid back vibe that we enjoy. My 21 year old daughter also fell in love with the place on a short visit a couple of months back and I'm fairly confident this was not because of the coffeeshops

Myabe this is all a bit irrelevant for a stag do but there is a hell of a lot more to Amsterdam than Coffeeshops and the Red Light District - I do agree that it is pretty expensive to eat and drink but not really that bad.
