Glad you're all ok.
Its standard practice for the emergency services, even if the injuried party has got out of their crashed vehicle and got into another one, they'll want to chop the roof of that vehicle.
A mate of mine took his 15 yr old son to the hospital in his own car, a Jaguar (as no ambulances were available). He had a suspected broken leg & when he got there, the hospital refused to remove him from the Jag, saying they wanted the fire service to attend, chop the roof off and spinal board him out!!!
He told em to stick it and his son got out under his own steam.
I actually think they just like chopping roofs off cars!

What puzzles me is that the OP and passenger didn't exit the car before the Fire Brigade arrived, unless they genuinely believed that they may be more injured than they subsequently realised, which is understandable! Tragically, staying put resulted in the writing off of the car!

the traffic was queing on the slip road, hence us having to stop. there were 4 cars involved and we were pushed into the car in front and double shunted behind. the other car was doing about 60mph. the damage was bad to the rear and sadly the rear doors had "popped" out of line so I suspect some chassis damage was done as the other car seemed to hit low down behind.
Yes it seems the emergency services are extremely cautious in incidents like these but they are the experts and when they started talking about the fact that you can still be paralysed after having got out of the vehicle we shut up and sat still like they asked us to.

sadly been told it is illegal to sell us back the car so it is going to make a scrap dealer lots of cash ... BUT getting another one Saturday, and it's even better and cost the same!!!! can't wait.
Gutted as you could of made a mint on it!
the first offer fromt he insurance company just came in, over £4,000 less than we paid for it 10 weeks ago and if you add on the new DVD player we fitted and the TRACKER, it's over £5,000 less. We'll be stringing this one out me thinks ...
My advice would be to put it in writing that you will not give them the V5 or assign the car to them (ie. as registered keeper) and they are not to dispose of it until you have agreed a valuation. That will put the pressure on them to keep talking to you.
I did this back in 2004 when my STI5 was stolen and had its engine blown up - the original offer was £9K and I ended up getting £12K, but the insurance company were obstructive all the way. No matter how much valuation evidence I produced supporting my proposal, they just reiterated the £9K offer and refused to provide any supporting evidence (they just restated that this was the opinion of their expert valuer).
They also went against my instructions and lied to DVLA so they could dispose of the car (because they did not have the V5 they wrote to the DVLA purporting to be me and changing the registered keeper - first I knew of this was when I received an acknowledgement letter from the DVLA). When I said I wanted to have an independent valuation they were a bit screwed - but finally managed to track it down to a scrap dealer in Bedfordshire.
In the end I gave them 24 hours to match the independent valuation (which supported my £12K proposal) or I would take them to court, and they folded.
(The funny thing was that they then forgot to deduct my excess - and I decided not to point this out as it seemed reasonable recompense for my time and the delay.)

As mentioned at least you are OK. You've mentioned you can't buy it back now, but one look at that car, and you can see it would have been a Cat B write off. Which is spares only for licensed breakers.
Luckily not everyone in the car breaking game does things by the book. So if you really want it back, obv not to go back on the road, speak to your local scrappy, bung them a few quid, and as if they could purchase it for you.
