Don't do "cash in hand" work as in the way it implies undeclared income, I never said I did.

But I do accept cash as payment, there's nothing illegal about that, however, I do issue a receipt for the full amount.
The customer this week owns a string of takeaways and always pays in cash as his is mainly a cash business.
My account books fully itemise every pound earned and when its cash, I make sure the customers full address is on my copy invoice so that my cash income is fully traceable. Often get people saying "I'll be paying cash and dont need a receipt" but they still get a fully itemised invoice.

Anyway, thats enough on the subject for me, if I'm guilty of anything, the IR will find it.
