Never understood that. I guess you still use the camera's built in meter to ensure that you've set the correct exposure

Sometimes, although I usually just rely on my eye. I can usually get much better results using the manual modes and setting the exposure etc myself than the camera manages on its automatic (landscape, portrait etc) modes.
