Ok so if I buy my straight through exhaust from the turbo to the back put an air filter in like a panel one and a fuel pump and I don't get it mapped straight away until I save up for Turbo, intercooler and injectors will it cause damage to my car?

Panel filter is fine at any time and fuel pump will probably be ok in the short term but a straight through exhaust will require you to keep off boost until a map, especially on a 2.5 as they flow more air
