I've now been told the only 6.5" comps I'll fit in an 04 WRX are Focal 165V Slims....
Who can I trust?
Where can I get a definitive answer on what I can actually fit?

Sounds like that is fitting the speaker with no spacer.
You need to deterimine the maximum mounting depth available to you, then determine the required depth of any speakers on your list. That will allow you to rule out those htat don't fit.
Take into account the fact that you can fit 12mm spacers with no problem which increases the available depth.
You need someone with a 03+ to give you the maximum depth figures though.

Infinity 6000cs with 12mm MDF fit fine with NO problems on a 03 or 04.
Real nice speakers and leaves you a nice clearance to the window.
