Use the self diagnostic plugs under the steering column to see if there are any fault codes, also you could give the bcs a clean and check all the boost/vac pipes for splits.

I clear a code 23 for the MAF and it hasn't come back so all clear could do with borrowing a spare coil and leads to see if that helps

Did you just trust the plug gaps were ok out of the box or did you check?
Have you checked all the pipes inc the intercooler Y pipe and the intake?
Have you cleaned the boost solenoid?
Have you got a lead to do some datalogging?
What year uk2000 is it?

Carb or brake cleaner is usually used, contact spray might be ok,plug both black and green diagnostic connectors to start the reset procedure and the bcs will kick in,spray into where the pipes go.
What ECU are you running if it's mapped?

The other pipe was probably a mbc(not good)
But defiantly check all the pipes, either a good visual check of smoke test.

Your ECU will be an 8s and not mappable without ESL board.
What makes you say it's mapped?

I'm Yorkshire so not close.

I'm haveing exact same problem v reg 2000 uk .. mine starters after a full samco hose change .. fitted everything had a weird idle and no boost bought a new pattern maf of eBay which solved the boost but still had the idle then after 2 days kept cutting out.. ive sinse fitted a new genuine oem maf (£120) compared to the £30 eBay one... it's better not cutting out but still got a weird idle like it's missing so slightly sinse then I've fitted a new idle control valve new o2 sensor, new coolant sensor , changed vac pipes of boost solenoid changed coil pack for a working one and still problem persist , I've took top mount of endless times triple checked everything is tight even sealed dumpvalve on top mount .. I've admired defeat now and it's going to mitzy art on Wednesday

It's running a different turbo and a decat, sounds like it hasn't been mapped, you will need to open the ECU to see if it has ESL board or some other generic chip fitted.
Sticking an sti ECU on won't do you any favors.
The hesitation on boost could well be the car running lean and detting,if this is the case then your engine won't last long.
I've been there with an MY98 uk2000,didn't last long after I fitted the decat, the bottom end shat it's pants.

Don't take this the wrong way but I don't give my number out to people I don't know, keep questions on the forum if you can as this may help others in the future.
It's well worth having a go on the search button as these kind of problems are well covered.
Check the things people have suggested and fire as many questions as you can

Just worth checking injectors too, should have gray 380cc but might have been changed for yellow 440cc.
Previous owner seems to have swapped/upgraded a fair bit without mapping.

You can either get an aftermarket ecu or an esl daughterboard already mentioned in the topic i think.

The damage may already be done by the previous owner though.

Remap including the ESL will set you back around £550
Or you can buy the ESL and cable for around the same price and DIY map, there are a few of us on here who DIY as well as some very good mappers who will give some advice if you choose DIY.
The other option is to put the car back to stock,TD04 and a catted down pipe should cost no more than 2-300£.
I've seen pics of your car and it looks nice, love the wheels and looks a tidy example.
Don't lose faith is my advice, might still have a good engine?
