What oil do you cook with? (Favourite Meal?)

Since the new year i have been trying to be a little more adventurous in the Kitchen. Fed up of heating up food, i've been trying my hand at proper cooking.
Only thing is, quite a few of the things that i have enjoyed use a fair bit of oil.
So which is most healthy and what do you folks use?

At the moment im using extra virgin Olive oil.

Also whats your favourite meal?
Any ideas on meals to make are also welcome.:)

To find out what oil my favorite food is cooked in I would have to ring my local chinesse takeaway :)

Ah, that will be hydrogenated vegetable oil then....

A side effect of incomplete hydrogenation having implications for human health is the isomerization of the remaining unsaturated carbon bonds. The cis configuration of these double bonds predominates in the unprocessed fats in most edible fat sources, but incomplete hydrogenation partially converts these molecules to trans isomers, which have been implicated in circulatory diseases including heart disease (see trans fats).

Really depends what you are cooking, Oriental is better with something like peanut oil, light olive oil is better for other cooking etc.

EV Olive oil for me every time.

My favourite meal to cook is the good old roast dinner.

A Beautifull 1.5KG Sirloin, coated in E.V oil, salt and pepper before roasting slowly until it has just 1" of pink through its core. Beautifull golden brown semi crunchy roasties with a fluffy outer.

Served with quartered carrots and parsnips. Gravy to taste.

Does food get any better? :D

We usually use extra virgin olive oil, but where less flavour is called for, we use rapeseed oil (mazola). High in mono-unsaturates and poly-unsaturates, but low in saturates. A healthy way to get fat!:D

I've always used olive oil but heard an eminent Indian chef recently talking about how he always uses vegetable oil as olive oil apparently doesn't release the flavour of the spices properly.

i.e. different oils required for different types of food - sesame oil good for some chinese cooking, for example.

Good question!

Different oils for different things. :thumb:

Rapeseed and olive oils are the best health-wise.

Don't waste Extra Virgin olive oil on frying. It's for dressings and bread dipping. Use normal or light olive oil. It's to do with the 'smoking point' or whatever it's called. Rapeseed for stir-frying.

If you're frying with butter, put a drop of oil in with it to prevent the butter burning. :D

Another vote for rapeseed here...

Olive oil has a low smoking point so not so good for frying. A high temp smoking point oil like sunflower or peanut oil is better.
