winter food
 
right decided to TRY and make some nice chicken soup, seeing as the weather has taken a turn for the worst:-

Jersey potatoes, leeks, carrots, mushrooms, red pepper, 1/2 onion, chicken stock, salt and pepper, chillie seeds, sheredded chicked, and rustic french bread.

veggies chopped and in pan with some olive oil.
cooked for 10 mins and stirred.
added 1pt chicken stock and chillie seeds, salt and pepper and simmering now for 20 mins.

about to fry some chicken strips, which will then be shredded and added to the soup.

cook for another 10 mins, or until veggies are soft

serve up and scoff !!!


i'll report back on the verdict!!!

I always add the stock and veg to the fried stuff myself that way you lose none of the flavour

Sounds nice, I made a chicken pie last week with left over roast chicken and white wine sauce for the first time. Making macarone cheese tonight. When it's cold you need food like that. Time to get the slow cooker out.

nice tip kieran.

yeah fed up with paying supermarket prices and eating rubbish, so went down the farm shop and purchased 90% of the ingredients from there.


gonna do a shepherds pie tomorrow, with kidney beans... :)
and some winter veggies !!!

i like this cooking lark!!!

edited to say: Just has a quick seasoning taste, and its spot on!!!
just waiting for the other half to get in from work and we'll crack some wine open and dive it :)

Take off heat, table spoon of flour, stir to absorb chicken juices will also thicken it nicely with the added stock etc.:)

nice one stu, i just used a tiny bit of milk and cornflour to thicken it up.

Sounds good. Plus some chunky/crusty bread to dip in and mop up :)

Moussaka is another great winter dish and pretty easy to do. dl

Christ, that all sounds expensive to me. :eek:

I'm on a £1/day challenge for food. Lloyd Grossman tomato/chili sauce with pasta today. That must have cost me a whole 60p :thumb:

You could have made a tomato chilli sauce much cheaper than buying that crap.

Bit pricey depending on what you put in it, but nothing betterer than a nice beef & ale casserole, with dumplings and leeky mash:luvlove:

LIghtly fry off some shredded leeks, and add to some mash potato..yummy!!
