Sandwich plate

Can someone advise why it is or is not such a good idea to use a sandwich plate with gauges please? I dont know much about it because i am a numpty :)

nothing wrong with the sandwich plate, just gives lower oil temp readings, approx 10 degrees lower than say above cyl 3. i think oil pressure is pretty good on the sandwich plate. nice and easy to fit.
