Question is "how do I get it to print in black only by default?"

Not sure in this model, but most of the HP series, within printer properties have, in the advanced tab, a default print settings button.
within that, there is a "colour" tab. In that window, there is an option tickbox to select greyscale.
Hope that is what you meant.
