Barbecue... smoking?
 
I've got an Outback gas ( :o ) barbecue with a hood and I'm very happy with it.

I've used the griddle and the normal grill. We've bought a rotissory (sp?) for it and after trying it out tonight, it works brilliantly on a whole chicken.

I've now got it into my head (after watching 'Flaming Barbecues') to try smoking food.

Is there an easy way to do this with a gas barbecue?
Do I just wrap the wood chips in foil or is it worth getting a smoker box?
Do you out the foil wrapped chips/smoker box on the lava rocks or on the grill?
How high should the gas be when doing this?
As smoking is a slower process, does it go striaght onto the warming rack, or on the grill?
Should I sear both sides, then stick it on the rack?

Sorry for all the questions, I just don't want to screw it up! :) Any other advice?

Smoking whilst holding the lighter fuel needs a bit of caution, other than that I have'nt a clue what you're on about :confused:

charcoal is fine if you like burnt food and entertaining flames licking up the fence and/pr your arms
a gas grill is the only choice if you want to actually eat the food
i have a beefmaster quad roaster

BBQ related post, but a sad story. Just found out that a 3 year old boy, younger brother of a boy in my daughters class, is in hospital after drinking lighter fluid from an open bottle, left in the conservatory during a BBQ on Saturday. They removed the respirator this morning, but the poor little kid can't breathe on his own. Anyone know if this is permanent, or if he will recover? I know lungs are delicate, but am really hoping he makes a recovery. Its bloody tragic, he's such a sparky little bugger in the playground.
Be careful with those BBQ's, expecially with kids around folks.

Charcoal is fine, never burnt anything yet using it and it tastes so much better. If you want to use gas, use the grill in doors. :razz: ;)

I bought some stuff out of B&Q that you put in the bottom of the bbq below the gas, they look like charcoal but ....

Well when the fat or fluids drip from the food it creates the bbq flames & such like

They went well at mines on saturday

I'm with Olly on this, If you're gonna use gas why not go the whole hog and get a George Foreman jobbie and an extension lead. Healthy and outdoorsy eh?

a BBQ is about eating good food outdoors, in a nice open space with good company. If the type of heat that is used on the food is that important i suggest that either your company, garden or food are ****e because you are getting desperate if thats the centre of your attention.

I suppose at Tiggs's high society 'soirees' people are too busy air kissing, one-upping, being sarcastic and antagonising each other to worry about whether their food tastes exactly the same as if it had been cooked under the grill? ;)

and what about the lighting ritual? Proper men gather around the barbeque, douse it in white spirit and flick a match in.... then stand there fire gazing! :D

hmmmmm...i can imagine. Fat bellys, beer cans and football......nice.

think i'll stick to gas and class and avoid the chavfest.

I'm more concerned this started because I was asking how to smoke food, rather than make a sweeping generalisation about the state of the nation!! :o

Live and learn!! ;)

I'll try out the wood chips in a couple of ways to see how well the food takes the flavour on board! :)

I will post finds here :)
